ROSÓŁ (CHICKEN SOUP)

INGREDIENTS

  • Whole Chicken or Chicken Bones

  • 2 Carrots, peeled

  • 1 Parsnip

  • 1 Onion, peeled and halved

  • Leek (greens only), rinsed

  • Salt and Pepper

  • Noodles

  • Parsley

DIRECTIONS

  • I prefer using chicken bones to make the broth instead of the whole chicken. However, a whole chicken can be used with or without cutting it into parts first. Place chicken into pot with 2 teaspoons of salt. Cover with water (approx. 8 cups). Boil on medium-low heat for 1 hour. If froth forms, reduce heat.

  • Meanwhile, place onion on dry frying pan and scald on all sides.

  • When the broth finishes, add carrots, parsnip, and scalded onion. Simmer for 30 minutes. Add leek and cooked chicken if you made the broth using chicken bones only. Add salt and pepper to taste. Continue to simmer 30 minutes. If using whole chicken, shred meat.

  • Add to serving bowl with prepared noodles and parsley to garnish.
