Chruściki (Angel Wings)
YIELDS APPROX 3 DOZEN
INGREDIENTS
2 cups all purpose flour
6 egg yolks
6 tablespoons sour cream
2 teaspoons baking powder
2 tablespoons high proof alcohol (i.e. Everclear)
Vegetable oil
Powdered sugar
DIRECTIONS
Add flour and baking powder to stand mixer and start on low. In a separate bowl, whisk together yolks and sour cream, incorporating slowly to flour. Add alcohol. Sprinkle additional flour if necessary to prevent sticking. Increase speed and mix until dough forms.
Remove dough and place on floured surface. Knead approximately 10 minutes. Roll dough with rolling pin or use pasta machine until dough is approximately 1/8 inch thick (setting 4 on pasta machine).
Fill deep pan (I recommend a cast iron dish) with vegetable oil (enough for oil to reach 2 inch depth). Heat vegetable oil in pan on low heat (3 max.).
Cut flour into strips approx. 1 inch thick and 5 inches long. Cut vertical slit in the middle of each strip. Fold the end through the middle slit and pull through to create a twist in each strip.
Increase heat to medium-high (6 max.) Place 3-4 strips at a time into oil and lightly brown on both sides. Remove from oil and place on paper towel. Dust generously with powdered sugar.
